2 Fresh bamboo shoots are soaked in cold water for 20 minutes and then cut into small pieces.
3 Chop dried Chili, cut onion into sections, slice ginger and shred dried tangerine peel.
4 Heat the pot and pour a small amount of oil, saute chives, ginger and spices;
5 pour in goose and stir fry for a while, add cooking wine, bean paste and braised soy sauce and stir fry evenly;
6 Add sugar and stir well;
7 Add appropriate amount of water (without goose meat);
8 add fresh bamboo shoots;
Pour into the pressure cooker, transfer to the stew stall, and season with salt when taking out the pot.
