Pepper pork belly soup
Ingredients
1 pork belly, 1 tablespoon white peppercorns, 800㏄ water,
A .50 grams of ginger, 2 green onions, 4 star anise,
B. 1/2 tsp salt, 1 tablespoon rice wine
Method
1. Crush the white peppercorns with a knife into cracked white peppercorns and set aside.
2. Cut off the fat on the outside of the pork belly, turn it over and add 2 tablespoons of salt (not included in the serving amount), rub it and rinse with water. Add 2 tablespoons of white vinegar (not included in the serving amount), scrub it and rinse it with water. Boil it in boiling water, remove and scrape off the intestinal membrane and set aside.
3. Add seasoning A to boiling water, add the pork belly from step 2, cook over low heat for 10 minutes and remove.
4. Put all the crushed white pepper from Step 1, pork belly from Step 3, seasoning B and water into the inner pot of the electronic pot, press the "Cook" button, and cook until the switch jumps. , take out the pork belly, wait for it to cool and cut into appropriate sizes, then put it back into the inner pot and simmer briefly.
