How to make steamed dumplings in Jiangnan?
The first step is to mix the stuffing. In LZ's hometown, salty dumplings are usually stuffed with shepherd's purse pork or white radish pork, but LZ thinks the stuffing is the same, similar to dumpling stuffing, and mixes celery and pork by himself.
Step 2: I won't introduce the stuffing in detail. Minced meat, celery, salt, monosodium glutamate, sesame oil and cooking wine are not sticky enough. LZ also put a little starch, and it will be fine after stirring for a while.
Step 3: Add some boiling water to the glutinous rice flour and start stirring. After the dough is formed, knead the dough. During this period, glutinous rice flour is added from time to time. The glutinous rice balls are a little hard. Forgive LZ for guessing.
Step 4: Start packing! Take a small dose, knead it into a circle and start to knead it into a bowl. Never knead it into a bowl or press it into a flat piece. Put some stuffing into the bowl-shaped glutinous rice balls, slowly close them in the tiger's mouth, and finally gently flatten them.
Step 5: Steam in the pot. I think this is the difference from the so-called jiaozi. Every time I describe jiaozi to others, others think it's jiaozi. Our jiaozi is steamed. It tastes hard and not so watery.
Remember to put zongzi leaves or oil-absorbing paper under it when steaming. Steam in boiling water for 15 minutes. When steaming, something is covered at the end to prevent water vapor from dripping on the jiaozi. LZ just found a fresh-keeping box to cover it.
Step 6: You're done. After taking it out, fan jiaozi for a while, and jiaozi will start to glow.
In our hometown, we always cook many dishes at once. After cooling in the hall, we can put it in the refrigerator and cook it until we want to eat it.
