What is evergreen?
It's caizi, which is one of the well-known specialties in this area of Ningbo, and it's also a famous dish with Han flavor. Its color is green, and it has a high similarity with the ornamental plant Evergreen, so it is often called "Evergreen".
What does evergreen look like?
Evergreen is a perennial evergreen plant. Its leaves are oblong, lanceolate or oblanceolate, with a length of about 15-50 cm and a width of about 2.5-7 cm. The top of the leaves is sharp and the base is slightly narrow.
Evergreen practice
1, cold salad
First, put the Evergreen in a basin to see if there are any impurities, clean it and soak it in warm water for 2 hours, then slowly stir-fry peanuts in a cold oil pan. After the Evergreen is soaked soft, wash it for three times, pour out the water and knead it, put it in a basin, put garlic into minced garlic with a garlic clip, add a little sugar, add a proper amount of soy sauce, and finally add the stir-fried peanuts.
2. Hot mixing
(1) First, we should soak the dried evergreen cabbage in cold water for one hour, so as to remove impurities from the evergreen cabbage;
(2) After the evergreens are soaked, take out the evergreens, squeeze out the water, and blanch them in boiling water for one minute;
(3) Take it out quickly after scalding, and squeeze it dry by hand;
(4) Add sesame oil, minced garlic, chopped green onion, salt, chicken essence and white sugar into a bowl and mix well. If you like spicy food, you can add a little Chili oil;
(5) After mixing the sauce above, you can pour it on the evergreen cabbage, which is the most delicious.
