The liquid is dispersed and the low-gluten flour is sieved for later use. (Some parents have reacted that the puffs made from the puff batter are too thin. Now the size of the eggs varies greatly, and the weight of the egg liquid should prevail. Egg liquid has 146g, and there are 3 eggs with 55-60g. )

Add water and butter to the milk and cook on low heat until it bubbles, as shown in the figure. When white bubbles appear, turn off the heat.

Add the sieved low-gluten flour and stir well until there are no particles. Because it is thick, it takes some time to stir. After the batter is stirred evenly, add fine sugar and salt.

Add the egg mixture several times, and stir the batter evenly until the egg mixture is absorbed. When stirring, the batter can easily enter the eggbeater, and then gently knock it out and continue to stir.
