Saturated fatty acids (SFA) are fatty acids that contain saturated bonds. Dietary saturated fatty acids are mostly found in animal fats and dairy fats, which are also rich in cholesterol. Saturated fatty acids are the main cause of elevated blood cholesterol, triacylglycerol, and low-density lipoprotein cholesterol (LDL-C), which subsequently cause narrowing of the arterial lumen, formation of atherosclerosis, and an increased risk of coronary heart disease. Therefore, eating more saturated fatty acids is bound to eat more cholesterol.
