How to fry green beans
1 Remove the gluten from the beans and wash them, cut them into 6cm long sections, blanch them thoroughly in a pot of boiling water, take them out, drain the water, put them in a container and mix well with refined salt and pepper to marinate.
2 Add olive oil, moistened starch, flour and soda and mix thoroughly to form a paste, add the beans and mix well.
3 Put the bean segments into 50% hot oil one by one, and take them out when they are thoroughly fried. When the oil temperature rises, re-fry until the outside is charred and the inside is tender. Remove and drain the oil. Serve with pepper and salt.
