BACKGROUND: At the end of May, Mr. Kong assigned an extracurricular assignment: let children plant soybean sprouts, and constantly measure the data during the growth of soybean sprouts by observing the germination process of soybean sprouts.
After some efforts, we successfully planted bean sprouts. The bean sprouts in the first picture shown at the beginning of this blog are the bean sprouts that my mother and I have worked hard to plant.
First, extract some online knowledge about soybean sprouts:
The recent research results show that although the protein content of soybean is high, its nutritional value is limited due to the existence of trypsin inhibitor, so people advocate eating soy products.
During soybean germination, most of these substances are degraded and destroyed. The utilization rate of soybean sprouts in protein is about 10% higher than that of soybeans. In addition, oligosaccharides such as raffinose, rhamnose and stachyose, which can not be absorbed by human body and are easy to cause abdominal distension, drop sharply or even disappear completely during germination, thus avoiding the occurrence of abdominal distension after eating soybeans.
In the process of soybean germination, more mineral elements such as calcium, phosphorus, iron and zinc are released due to the action of enzymes, which improves the utilization rate of minerals in soybean. After soybean germination, except vitamin C, carotene can increase by 1-2 times, vitamin B2 by 2-4 times, nicotinic acid by more than 2 times and folic acid by several times. Aspartic acid increased sharply the next day after bean sprouts, so eating bean sprouts can reduce the accumulation of lactic acid in the body and eliminate fatigue. Bean sprouts also contain a substance called nitrophosphatase, which can effectively resist epilepsy and reduce seizures. In recent years, it has been found that bean sprouts contain an interferon inducer, which can induce interferon and increase the antiviral and anticancer ability in vivo.
Soybean sprouts, like soybeans, also have the effect of diuresis and detoxification. If you have dry mouth, sore throat, dry cough with yellow phlegm, tingling in both ribs, short and red urine, poor stool and body heat, you might as well buy 500- 1000 grams of soybean sprouts, add 1 piece of aged dried tangerine peel, and decoct with plenty of clear water and strong fire for 4-5 hours to clear lung and remove yellow phlegm.

On the evening of May 3 1 day, soybean sprouts were soaked in water. In order to see the growth process of soybean sprouts, soybeans are soaked in a goldfish bowl made of glass.
On the morning of June 1, after a night of soaking, the soybeans swelled up and looked much bigger (mom later added some soybeans for observation). The water soaked in soybeans is a little turbid, and there are some tiny bubbles floating on the water.
On the evening of June 1 Sunday, soybeans have been soaked for a whole day. We pour out the water and spread a wet cloth on the surface of the goldfish bowl (the method taught by Teacher Kong).
On the evening of June 2, soybeans began to germinate (as shown below), and you can smell the bean that has not germinated has the smell of fermented bean curd. The newly sprouted bud is called "radicle", and the sharp part at the end of radicle is called hypocotyl (mom said, I don't understand these).
Because before doing this experiment, my mother and I consulted a lot of information together, knowing that the growth of soybean sprouts needs air. If you soak in water for a long time and can't touch the air, it will stink. The smell we smell is the smell of rotten soybeans that have not germinated. So, we picked some germinated soybeans and continued to observe and measure them, while others were thrown away. (as shown in the figure below)
Just mentioned that the surface of the goldfish bowl should be covered with a wet cloth. Why? We checked the information, only to know that because of the hot weather, wet cloth can keep the moisture of bean sprouts from evaporating too fast, so that bean sprouts will not dry to death. In order to keep a certain amount of moisture on the surface of bean sprouts, mother sprays a small amount of water on the surface of bean sprouts twice a day, and the wet cloth should be wetted again before laying. Later, it was proved that this method can make bean sprouts grow fast!
At this time, the length of bean sprouts was measured, and the bean sprouts were curved, about12 mm. In order to let everyone see clearly, my mother took a recent photo of me and put a ruler next to it for comparison.
On the evening of June 3rd 10, you can already see the obvious bean sprouts with different lengths, and most of them are curved, which is really ugly! Let's start with a family photo of bean sprouts:
I helped my mother take a ruler and measure it. The bean sprouts have grown to 30 mm .. Mother threw away some "stunted" bean sprouts, leaving only a dozen well-growing bean sprouts.
At 7 o'clock on the evening of June 4, the soybean sprouts are already 50mm;
At 8 o'clock on the evening of June 5, the soybean sprouts were 100mm long!

Because bean sprouts are curved, it can be estimated that the length has reached 100mm, and it can be clearly seen that some small whiskers have grown beside the bean sprouts. Mother called it "small lateral root". Mom said that the growth of small lateral roots means that bean sprouts are ripe and ready to eat!
On the evening of June 6th 10, the bean sprouts were as long as 150mm! My mother and I are surprised at the growth speed of bean sprouts!
On the evening of June 7, the small lateral roots on the bean sprouts were very obvious, and the length of the bean sprouts was 190mm:
On the evening of June 8, the bean sprouts grew to 230 mm.
June 9th is the 10 day for the growth of bean sprouts. Suddenly I found some small green leaves growing in the middle of soybeans:
If you read this diary carefully from beginning to end, you will find that the pictures above are the same as those at the beginning of the diary, except that my mother added different borders to them.
Because the textbook only requires us to measure and record the length of bean sprouts in the first 9 days, we stopped measuring the length of bean sprouts on day 10.
Summarize the necessary conditions of soybean germination and growth;
1, soybeans need air for germination, and soybeans will rot and stink if soaked in water for a long time;
In order to keep soybean sprouts growing, we must give them a certain amount of water. For example, my mother will spray some water on soybean sprouts every morning, and then wet the wet cloth covered on the goldfish bowl (because the weather is hot, the water evaporates quickly).
