How to Make Banana Chocolate Pie

Vanilla pods 1/4 ( vanilla extract)

Dark chocolate (60% or more) 200g

Bananas 5 slices
Rum moderate amount

Dark Chocolate 55g
Light Cream 2 tsp
Honey 1 tsp
Water 1 tsp
How to Make Banana Chocolate Pie ?
First prepare the pie crust. Cream the butter + sugar at room temperature until it doubles in volume and is fluffy and white and feathery.
Add the eggs and continue beating until well combined.
Add the low flour and mix by hand with a spatula to avoid gluten. Finally, add the almond flour and mix well.
The final dough batter, wrapped in baking paper and placed in the refrigerator to chill.
Start preparing the chocolate sauce for the pie filling. Bring the light cream + vanilla pod and scraped out vanilla seeds to a boil in a small saucepan. Turn off the heat and cover to keep the cream warm.
Separate the yolks and whites of 3 eggs. Whisk yolks + sugar until bulky and light in color (as shown).
The previous cream has been brought down to a non-scalding temperature. Slowly pour half the amount into the yolk batter, whisking with an egg pump as you go.
Turn 7 of the mixture back into the skillet and stir with the remaining cream.
Gently heat the egg yolks and light cream mixture over low heat. Heat until the liquid is semi-fluid and leaves clear traces on a wooden spoon (see picture).
Pour the hot 9 into the prepared dark + milk chocolate and add the remaining butter. Stir slowly until all ingredients are fully incorporated into a runny chocolate solution.
As shown. If the chocolate cools down and solidifies in the middle of the process, heat it in the microwave for 10 seconds.
At this point, remove the chilled pie crust from the oven and use a rolling pin to roll out the pie into a round shape; this recipe has a very flaky crust, so it may be a little tricky to work with. Lay the rolled out pie crust in a pie plate, removing any excess, and use a fork to make air holes.
Lay a sheet of baking paper on top of the pie crust and weigh it down with something heavy (rice, beans, rocks, etc.). Bake in a preheated 175 degree oven for 40 minutes, removing the baking paper and weights halfway through to make sure the pie crust is fully colored.
Peel the bananas and cut them into 1 cm thick pieces, adding flavor with a good amount of rum.
Remove the baked pie crust and lay the bananas flat inside.
Top with the prepared chocolate sauce and spread well with a rubber spatula. Then place in the refrigerator for 2 hours or more, or freeze for 30 minutes.
Mirror chocolate drizzle recipe (optional).?
Dark chocolate + two tablespoons of whipped cream, microwave for 30 seconds and stir well. At this point add a spoonful of honey, stir well then add water by the spoonful. Remember to mix well each time before adding the next ingredient so that the chocolate does not emulsify.
Pour the mirrored chocolate sauce over the chilled pie and rotate the pie plate so that the liquid covers the surface evenly (do not use a spoon or spatula as this will ruin the mirrored effect).
Using the mirrored drizzle gives the pie a glossy finish, making it a great gift idea. If you don't want to go to all that trouble, you can always just sprinkle it with cocoa powder and enjoy.
