Steps
1. Ingredients: bitter melon, red pepper, dried chili, and tempeh.
2. Wash the bitter melon, cut it lengthwise, and use a spoon to scoop out the pulp and the white tendons.
3. Cut the bitter melon into strips with the flesh and veins removed
4. Put the cut bitter melon into a container, add a spoonful of salt to mix well, marinate for 5 minutes, and kill Release the water vapor inside the bitter melon.
5. When pickling the bitter melon, cut the red pepper into strips about the same width as the bitter melon, and cut the dried pepper into sections.
6. The bitter melon that has been pickled for five minutes has already absorbed a lot of water.
7. Squeeze out the water from the pickled bitter melon strips and rinse with water to remove the salty taste.
8. Put a little oil in the pot, add the bitter melon to wash away the salty taste and stir-fry over medium-low heat until the water in the bitter melon is basically dry.
9. Return to the pot, put a little base oil in the pot, add tempeh and dried chili and saute until fragrant.
10. Saute the dried black bean chili until fragrant, add the stir-fried bitter melon and stir-fry.
11. Add red pepper.
12. Add red pepper and stir-fry evenly, then add salt and MSG in turn. (A small amount of salt should be used. The flavor has already been absorbed during pickling. When rinsing, only the surface salt is washed away)
13. Add sugar.
14. After adding all the seasonings, stir-fry again and turn off the heat.
15. A seasonal dish suitable for summer, cooling and reducing heat.
Tips
The white melon pulp inside must be removed. Otherwise, the taste of bitter melon will be affected and it will not taste crispy.
Pickling with salt can remove the bitter taste of bitter melon.
