A keel is the fossilized skeleton of an ancient mammal, such as a three-toed horse, bovine, deer, rhinoceros, or elephant, or the fossilized incisor teeth of an elephant. In addition, a pork keel is the backbone of a pig, which is lean, low in fat, and contains a large amount of bone marrow; the soft, fatty marrow is released when cooked, and the marrow can be used in sauces, soups, or simmered dishes.
