Practice of Tianma ribs soup
Step 1: Clean the ribs, put them in a pot with cold water, add a few slices of ginger, add 2 tablespoons of cooking wine, and then boil the water. There will be foam when the water boils, skim it off with a spoon and cook for 1 min. Then take out the ribs with a colander, put them in a clear water basin, and rinse off the blood foam stuck to the ribs.
Step 2: Prepare a stewing pot, put the cleaned ribs into the stewing pot, add 3 pieces of cleaned Gastrodia elata, add a few pieces of ginger, add 500 ml of mineral water, and then cover the stewing pot.
Step 3: add water to the pot, add enough water, then put the stew pot into the pot and cover it. After the fire boils, turn to low heat and simmer for 3 hours.

Step 1: Prepare 1 pig brain. Generally, you should make a reservation with the stall owner who sells pork in advance. Soak the pig brain in water for half an hour and then wash it. It seems difficult to pick out the blood tendons and other things on it, but it is actually easy to peel them off. Patiently peel it all off, clean it, rinse it off, and then put it in the stew pot.
Step 2: Prepare a little medicinal materials, which is also very simple, including 5 red dates, a little medlar, and gastrodia elata 10g. Clean these medicinal materials and remove the red dates. The red dates in the stew must be removed because it contains high calories.
Step 3: Put all the cleaned medicinal materials, together with pig brain, into the stew pot, and then add appropriate amount of water. The small saucepan I use here is enough to boil 1 pig brain and add 2 bowls of water. The saucepan won't dry much water. It's not necessary to add too much water when adding water, but don't add water halfway, which will destroy the nutrients of the soup.
Step 4: Cover the pot. After the fire is simmered, turn to medium heat for one and a half hours. If the power of the large saucepan is high, you can stew 1 hour, and then leave it for ten minutes after turning off the fire.
Step 5: When the time is up, just add the right amount of salt and a little peanut oil to taste, without adding other seasonings. The soup is very rare and sweet. Sometimes you don't add salt or oil, but I think eating pig brain with salt and oil will taste better.
