According to legend, "Dongpo Meat" was created by Su Dongpo when he was the magistrate of Xuzhou, and its original name was "Dongpo Reward Meat". In 1077 AD, Su Shi was appointed magistrate of Xuzhou. Within four months of taking office, the Yellow River burst. Su Shi, as the official of Xuzhou's parents, resolutely led the people in the city to stick to the city wall day and night, "passing through the house without entering", commanding the soldiers and civilians to block the city, and finally saved the city.
In order to thank this "parent official" who shared the joys and sorrows of the people, the people slaughtered pigs and cows one after another, and sent them to the Zhizhou Yamen with gongs and drums, and presented them to Mr. Dongpo as a token of their gratitude. Although Su Shi repeatedly refused, the people insisted on giving them to his husband. Su Shi had no choice but to accept them all, and personally instructed the chef to make the meat into braised pork and give it back to the people, so it was called "Dongpo's Gift Meat". .
Not long after, Su Dongpo was arrested and imprisoned because of the "Wutai Poetry Case". After the Queen Mother Cao and the court officials pleaded for mercy, he survived and was demoted to Huangzhou. At that time, Su Shi often cooked food himself, and his specialty was braised pork. He once wrote a poem: "Slow down the fire and use less water. When the fire is sufficient, it will be beautiful." A few years later, Su Shi was transferred to Hangzhou as the magistrate, and the real "Dongpo Meat" was born at this time.
The common people praised Su Dongpo for doing a good thing for the local area. They heard that he liked braised pork, and during the Spring Festival, they all sent him pork to express their appreciation.
Su Dongpo received so much pork and felt that it should be shared with the tens of thousands of migrant workers dredging the West Lake, so he asked his family to cut the meat into squares and make his famous braised pork, even with wine. , distributed to each household according to the roster of migrant workers. But when his family was roasting meat, they misunderstood "send it with wine" as "cook it with wine". Unexpectedly, the braised pork was even more crispy and delicious. The people who received the meat praised Su Dongpo for sending it. The meat is cooked in a unique way and is delicious, so it is named "Dongpo Pork".
