Fenpi has always been a traditional food in Ruzhou. In the 20th year of Daoguang reign of the Qing Dynasty (AD 1840), there was a vendor named Tian Jiayou along the puddle on West Street in Ruzhou City. He was a Sheqi vendor from as far away as Nanyang. As for salt, I once saw people there making "pink skin" from miscellaneous beans, eight to nine pieces per catty, as thick as pancakes, and sold by the catty. It needs to be cooked in boiling water when eating, which is very inconvenient. After Tian Jiayou came back, he switched to using mung bean starch to make it. He painstakingly researched and tried it repeatedly. The noodles he makes are much thinner than those made by Nanyang Sheqi, about 30 pieces per catty, and the texture is better than that of miscellaneous beans. However, it still needs to be soaked in boiling water before consumption and cannot be consumed immediately. During the Guangxu period, the production process was passed to the second generation Tian Jiusi. He continued to explore and improve, and the powder skin became thinner, from the original thirty sheets per catty to forty sheets. It can be eaten by soaking it in warm water, and the world praised it. Before 1929, the craftsmanship of making pink leather was passed down to the third generation descendant Tian Qingqu. As time goes by, it is passed down from person to person several times, but the heirs of the Tian family remain unchanged in their ambition to pursue reform and innovation in the production process of powdered leather, and they continue to practice and explore hard. Under Tian Qingqu's research and development, it has reached 48 pieces per catty. The skill has reached the top and the reputation is getting better and better. In 1942, in the hands of the fourth generation brothers Tian Xinguang and Tian Xinzheng, they developed more than 50 pieces per catty. At this time, "Ruzhou Fenpi" has become famous far and wide and has formed a market brand. Merchants from Shaanzhou, Sanmenxia and Xi'an drove their animals to Ruzhou to buy vermicelli. After liberation, the craftsmanship was further improved, reaching the current level of 60 pieces per catty. From 1985 to 1987, it was exhibited and sold in Beijing, Shanghai, Guangzhou and other places for many times, and it was well received by everyone, and the powder skins on display were sold out. Tianjia powder leather production technology has been studied and explored for more than a hundred years, and five generations of people have passed it down one after another before they have achieved superior craftsmanship. The secret of its production is: "seven minutes of spinning, eight minutes of uncovering, nine minutes of spreading, and ten minutes of moving." That is, "Bronze Spin Quickly and Slowly" If the water is warm, it can be peeled off completely; the holes can be patched and rounded, and the water and oil can be used to dry it to see if it is sunny. "Only in this way can it be rinsed into a piece of pink skin that is not too big or too small, with equal weight and consistent thickness.
