Turn the tripe over and cut off the fat with scissors. Then take a proper amount of alkaline noodles and rub them repeatedly. The alkaline surface must be evenly coated! Knead for about three minutes, then rinse with water.

Then daub the tripe with coarse salt and flour and rub it repeatedly. Flour can take away the stolen goods from the tripe, but coarse salt particles can inhibit this effect. After about two or three minutes, rinse with water.
