Recipe:250g dried soybeans, 5g salt brine.
Homemade brine tofu
1. Soak 250 grams of soybeans overnight.
2. A soy milk machine with a vegetable and fruit cleaning function. Twice, twice each time, the soybean residue is very fine. If you add water, I checked on the Internet is 1:5, that is, 250g of soybeans, 1250g of water. in fact, there is no need to be so strict. I added to the highest water level line of the soybean milk machine.
3. Beat the beaten soybean milk to remove the froth.
4. Strain the dregs. There are cloth bags for filtering soybean residue on the internet. I don't have one at home. Red face said I filtered with a cotton thick towel, provided it is new, and then boiled for ten minutes (wipe cold sweat). It's too spectacular to be in the picture.
5. Pour into a pot over high heat and cook for five minutes to remove the fishy flavor of the soybeans themselves. Skim off the foam.
6. This is the marinade, available online. Take 5g of warm water to melt. Domestic rice in a small bowl for a small bowl, the specific amount of water they consider, haha.
7. Let the boiled soybean milk a little cooler, 80 to 90 degrees or so you can marinate. Salt water should be added slowly in batches, stirring constantly with a spoon until the soybean milk thickens and crystallizes, and the crystals are separated from the water, as shown in the picture. The brine is not used up yet, there is still about a quarter left!
8. Settle down a little and calm down! Find a container with holes in it at home, I used the steamer that came with my rice cooker, a piece of cotton cloth. My little flowery cotton cloth is so pretty!!!? And cook it for ten minutes, haha! Pour as shown in the picture.
9. Squeeze the water a little, wrap it up, and wrap it a little tighter. Give? Increase the burden. I like them tender for five to ten minutes, I like them old for ten to twenty minutes.
10. The finished product is baked, steamed fresh marinated tofu. When I tasted it, it had a strong soy flavor and a slightly sweet texture! Weighed it at 325 grams!
