Ingredients
500 grams of yam beans (steamed in advance), 120 grams of sugar, 100 grams of water, 50 grams of starch or powdered sugar
Method
1. Steam the yam beans in advance and place the starch in the microwave oven until thoroughly cooked. If you have powdered sugar at home, you can just use powdered sugar.
2. Add sugar and water to a clean small pot and bring to a boil over medium heat.
3. Stir until the sugar is completely dissolved, then turn to low heat.
4. Cook slowly, stirring constantly while cooking.
5. The water is slowly boiled away, and the sugar liquid in the pot begins to bubble. Try it with a spoon. The sugar liquid begins to thicken and can obviously hang on the spoon. Turn off the heat.
6. Pour the cooked yam beans into the sugar liquid and mix thoroughly.
7. Sieve powdered sugar or cooked starch and let cool.
Tips
1. You can also put the starch in a bowl, wrap it in plastic wrap and steam it together with the yam beans.
2. Continuous stirring of the sugar liquid during the heating process will help to produce sugar sand. If you are making candied haws, you can no longer stir it after the water is boiled dry.
3. If starch or powdered sugar is not used, the finished product will not be so white and will be a little sticky when eating, but it will not affect the taste at all.
