Practice of natural pigment
To make rainbow jelly, it is not difficult to prepare natural pigments first. Red ones can be made of red pitaya or red cabbage, yellow ones can be made of orange juice and lemon, green ones can be made of matcha or colored essential oil, and purple ones can be made of purple cabbage. The only difficulty is blue, because there is no similar color in fruits and vegetables to replace it. I can make blue jelly this time thanks to the blue iris, which is just blue. It is suitable for natural blue.
After the purplish-red vegetables are cooked in the pot, the leaves are filtered out, leaving the soup with fine sugar, continuing to cook with low fire, and finally collecting the juice with high fire and cooling it for later use. Boil the blue iris in boiling water, then add the fine sugar and mix well. After cooling, pour all the mixed Geely water into lemon juice and stir well. Pour into the mold. Prepare all kinds of jellies in turn, put them in the refrigerator for one night to solidify, demould, cut into pieces, sprinkle with coconut milk and serve.
