Duck tongue 400g, onion 1, ginger 1, garlic 2, cooking wine 30ml, soy sauce 15ml, soy sauce 15ml, rock sugar 10g, sugar 5g and salt 2g.
working methods
1. Wash the scallion and cut into sections. Slice ginger. Peel garlic and rub duck tongue with running water.
2. Add enough water to the pot, add the washed duck tongue, turn to medium heat for 5 minutes after the fire boils, remove the duck tongue, and then rinse it repeatedly with clear water to pour out the water that has cooked the duck tongue.
3. Pour a proper amount of water into the pot. After the fire boils, put the washed duck tongue in it for one minute, then take it out and drain it for later use.
4. Put the drained duck tongue into a bowl, add 15ml soy sauce and 15ml cooking wine, sugar, salt, onion, ginger and garlic, mix well and put them in the refrigerator for 5 hours.
5. Pour some oil into the pot. When the oil is hot, add onion, ginger and garlic until fragrant. Add salted duck tongue, add crystal sugar, soy sauce and the rest cooking wine, and add enough water to the surface of duck tongue. After the fire boils, turn to low heat and simmer for 20 minutes until the soup is dry.
