Ingredients:
Duck eggs, pork, ginger, scallions, soy sauce, salt, white pepper, cooking wine, water, seaweed, coriander.
Practice:
Stir the pork into minced pork, add green onion, ginger, and cooking wine to remove the fishy flavor. Add 3 spoons of soy sauce, a spoon of salt, half a spoon of white pepper, mix well.
Add water to the pork mixture, and stir the pork mixture vigorously, set aside.
Bring hot water to a boil. Find a deeper container and crack the duck eggs into it. (The container should not be too big, a little smaller is more convenient to operate, so that the yolk of the duck egg floats, so that when stuffing the meat, the yolk is not easy to break, not easy to flow out.)
Find the eye of the duck egg. (There is a tiny dot on top of the yolk, this is the eye.)
With a bamboo skewer in your left hand and chopsticks in your right, insert the skewer into the eye of the egg, but don't insert it too far or the egg will break. (If you don't have bamboo sticks, you can use chopsticks instead.)
With your right hand, clip a bit of the pork filling and stuff it into the egg yolk along the bamboo skewer. (When stuffing the pork with chopsticks, a skewer can also assist in stuffing the pork.)
Until the duck egg yolk is stuffed full of pork filling. Afterwards, take the finished duck eggs and cook them in boiling water.
Cook until the duck egg floats, then cook a little more for a few minutes, then you can fish it out.
Sprinkle a little nori and parsley in the bowl, add a little salt and white pepper, then add the boiled duck eggs after boiling the nori in a little soup.
Tips:
To make dunked eggs, you need to use fresh duck eggs, the membrane on the surface of the duck egg is thicker, so it is better to stuff the meat into the yolk.
When you cook the eggs in the pot, you can stir them a little to avoid sticking to the pot!
