Tomato Roasted Eggplant
In Ingredients: 2 long eggplants, 1 sharp pepper, 2 tomatoes, 1 tbsp oyster sauce, 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp cornstarch, 1 tbsp ketchup, 1 tbsp sugar, chopped garlic
Steps:
1, peel the skin of the eggplant and cut it into hobnailed cubes, cut the sharp peppers into cubes, and cut the tomatoes into cubes.
2, eggplant coated with cornstarch, and then fry in a pan until hard skin and fish out.
3, prepare a bowl, put all the seasonings into it, add 4-5 spoons of water and mix well.
4, start a pot of oil, hot oil into the crushed garlic sautéed, put the tomatoes and stir fry a few times, put the bell pepper pieces to add tomato juice, and finally add the fried eggplant pieces and stir fry evenly out of the pot.
