How to stir-fry black fungus with winter bamboo shoots
1 Wash the bamboo shoots and cut into cubes. Soak black fungus in 40-degree warm water, wash, and tear into small pieces with your hands. Finely mince onion, ginger and garlic.
2 Pour water into the pot, heat over high heat until boiling, add black fungus and blanch for 1 minute, then remove and drain. Add the bamboo shoots and blanch for 2 minutes, remove and drain.

3 Pour oil into the wok. When the oil is 70% hot, add onion, ginger and garlic and saute until fragrant. Add the bamboo shoots and stir-fry for 1 minute. Add the fungus and stir-fry for a few times, then add oyster sauce, vinegar, sugar, salt and water and continue to stir-fry for about 2 minutes. After turning off the heat, add the chicken essence. After serving, sprinkle with some sesame seeds.
