How to make Durian Soft Omelette ?
Knead the dough except the butter until it reaches the extended stage, add the butter and continue kneading until all the butter is fully incorporated and a thick film or glove film is ready.
Shape the dough and let it rise until it doubles in size.
While the dough is rising, make the filling by placing the cream cheese in a deeper bowl or small pot and adding the sugar in 2-3 batches. Grind the durian meat into a durian puree. Mix the durian puree into the cheese and stir well.
Divide the fermented dough into 5 equal portions, shape each portion separately and let it rest for about 20 minutes to loosen the dough.
Pat or roll out the dough with hands or a rolling pin with the interfaces facing up, add 1/5 of the filling to each portion, fill completely with the filling and pinch the dough together, place the interfaces facing down.
Finally ferment the dough until it doubles in size.
Spread a thin layer of flour over the top of the fermented dough and cut out the dough. When the fermentation is almost complete, preheat the oven at 230° for about 10 minutes.
After the oven is preheated, place the dough in the center of the oven. The time and temperature can be adjusted according to your oven's characteristics.

Tips
1 The amount of water used will vary depending on the flour used. If using natural yeast, remember to subtract the amount of water contained in the natural yeast before adding the amount of water.
2 Honey can be left out, just add more sugar according to your personal taste.
3 Natural yeast, yeast plus one can, the formula are added, is both want to natural yeast taste, but also want to speed up the fermentation speed.
