Most guests at Bodhi Valley eat all three meals at the B&B. We specialize in Japanese cuisine and creative Chinese dishes, all of which are made to maximize the use of seasonal and local organic ingredients.

Multi-cuisine chef paschy from Taiwan presides over our Japanese restaurant, and the hot pot dishes we offer every winter are highly acclaimed, with many guests coming back specifically for our dining. In addition to the two daily dishes, we also have a higher-specification Bodhi Family Feast, which is also booked by local guests from Hangzhou. The Bodhi Family Feast and Spring Picnic are already part of our daily activities, and we recently had an outdoor catering event where we made wildfire bamboo rice, and our guests participated in the whole process of making it and had a great time. The difficulty for a B&B like ours to do catering may be that it is located in the mountains, where ingredients are not as abundant and diverse. As a native of Jiangsu, I am good at Huaiyang cuisine, but of course I also like Cantonese cuisine, Southern Fujian cuisine, and now Western cuisine, so I often mix and match, hoping to present healthy and nutritious meals. Most of our customers come to us for our food, and I've been told that my beans in sauce have reached the "five-star" standard. When our public app is ready, we will share small videos of our dishes with our members.

We basically organize an event every month, and each month has a theme. We don't stock our refrigerator, and all ingredients are hand-picked by the chef for the best quality based on what's available in the market that day, so we can't offer an à la carte system.

I'm a food lover myself, I've opened a cafe, I've run a western restaurant, and the reason why Pinecone B&B was born is also related to food. After I tasted so many food, I found that I missed the taste of my childhood more and more, which was the vegetables grown by my grandpa's hand with water to drive away insects, and the unique taste of my grandma's cooking with firewood at the stove.

I specifically built a nearly 200-square-meter independent restaurant in Songo, but also in the village contracted 30 acres of land planting vegetables, do not use a little bit of pesticides and fertilizers, to ensure that the ingredients are fresh and healthy, chickens, ducks and other poultry and the villagers signed an agreement to ask them to carefully feed, and here are free-range poultry, now catching the kill.

In order to the best taste and experience, pinecone dining is the need to make reservations, only 10 people per day, but also need to be booked 2 days in advance. Each season, Pine Nut only makes 12 dishes, and every time you change the season, you change 1/3 of the dishes. All the dishes are made by the owner, mainly western food and home cooking, which is a combination of "Chinese and western", making the farm food feel like western food, and adding Chinese elements to the western food.

The restaurant is open to the public, charged by the seat, no menu, according to the seasonal ingredients, every meal has a surprise, every dish is the heart. Each meal is a surprise, and each dish is heartfelt. Every day, people drive two hours from Shanghai to have this meal.

Our breakfast here is based on local specialties, including eggs, freshly ground soymilk, mountain round rice, with local tea cakes, different flavors, different nutrients with each other, abundance and frugality.

As an aside, our local tea cakes have a special story to tell. The older local farmers get up at 2:00 in the morning. What are they doing up so early? In fact, they go to the breakfast restaurant in the nearest small market, drink a few cups of glutinous rice wine, make a pot of strong tea, eat a few pieces of tea cakes, and then depart back to the village with satisfaction, the whole process takes about 2 to 3 hours.

As far as I can see, they basically go there every day, and the farmers don't really go there for breakfast, but purely to find a place to meet and chat about national issues or bits and pieces of their daily lives, and rush back home just in time for farming.

Cloudbank Mountain Residence does not provide Chinese food, but the dinner is very special, with the main dish of medicinal food, local specialties as a supplementary dish. The winter medicinal meals are based on tonic, the spring and fall seasons are about conditioning, and the summer is based on strengthening the spleen and removing dampness. There are many guests like our family's Sharen beef, generally reflecting a light medicinal flavor, eat up the aftertaste.

Dried bamboo shoots with roast pork is also our specialty. Dried bamboo shoots are made from the highest sea level and naturally grown bamboo shoots in Moganshan, and can be steamed and dried in the sun. You should know that the dried bamboo shoots sold in the market are salted and cured, and the taste is much worse than ours. Because of the difference in altitude and soil quality, the dried bamboo shoots from Cloudbank Mountain Residence are especially soft and very popular with our guests.

Of course, the freshness of the ingredients is the most crucial factor. The dried bamboo shoots are made from new bamboo shoots grown in the local bamboo forests in Jingxian County, and the meat is also chosen from the local farmers' homes to ensure the original flavor, which is highly praised by the guests who have eaten it.

If you want to talk about our own specialties, since I'm from the Northeast, the braised fish with slightly northern flavors is also a staple of Xiaoman's courtyard, with local ingredients paired with northern practices, and guests love it.

Now that it's spring, we take our guests to pick tea and dig bamboo shoots to experience a different kind of countryside life. We also have a swimming pool in our yard, and in the summer evenings, we organize some parent-child activities for kids to play, or we can all have a barbecue and make games together. We also have a great roof terrace where you can watch the stars and play cards on summer nights. In short, all the facilities in the yard are free for guests.

When it comes to the difficulties of B&B catering, I think the biggest difficulty is that there are not many styles of food, because we have to use local fresh ingredients, and due to the geographical constraints, there is no way to make the delicacies in the city. In the face of this problem, my solution is to try to diversify the production of the same ingredients, so that guests will have a different taste experience every time they stay.
