The reason for putting moon cakes on the dock
In the early years of the Republic of China, Ding Kaitai, the founder of Ding Yuanxing, opened the first cake shop in Qiaodun Town. When he baked a batch of Chaozhou-style moon cakes in a cramped cake workshop, it should be unexpected that Ding Yuanxing could sell tens of thousands of moon cakes a day a hundred years later.

"Dingyuanxing" moon cakes have been selling well. After the founding of New China, they were merged into the Bridge Pier Supply and Marketing Cooperative. It was not until 1980s that they returned to the hands of Ding Jinbang, the second generation descendant.

When Ding Jinbang reconnected with his ancestral estate, he felt indescribable excitement and joy. He inherited the superb production technology of his ancestors and improved it. Not only is he busy opening a shop, but sometimes he goes to distant towns to sell moon cakes. In this way, "Dingyuanxing" moon cakes further spread their reputation with quality. On the eve of Mid-Autumn Festival, there is often a long queue in front of his shop. In 1990s, in order to push the moon cakes on the wharf to a bigger market, Ding Jinbang registered and established Dingyuanxing Food Factory and registered its old name Dingyuanxing. Today, the signboard of "Ding Yuanxing" has been passed on to Ding, the third generation descendant of Ding family. The old shop "Dingyuanxing" has also been transformed into Wenzhou Dingyuanxing Food Co., Ltd., and launched a tunnel oven worth more than 300,000 yuan last year. The efficiency of making cakes is 50 times higher than in the past.

Dante has always stressed that the taste of moon cakes is basically the "original flavor" of a hundred years ago, except that it meets the needs of modern people to pay attention to health and lacks sugar and oil. In addition, the shape of "Dingyuanxing" moon cake still maintains a big "round face" covered with sesame seeds, which is about 820 grams at most. Compared with all kinds of moon cakes today, its humble appearance will not hide its authentic taste, kindness of materials and sincerity of price, so it is favored by consumers.

"branches and leaves everywhere"

"The root-seeking of moon cakes on the pier should be a kind of Chaozhou moon cakes, but after the improvement of my grandfather's generation, after so many years of development, it has already become its own." Ding said to him.

It is understood that the traditional fillings of bridge pier moon cakes include tenderloin, peanuts, candied melon and so on. , baked with a primer as high as 280 degrees Celsius. The center temperature of the freshly baked moon cake can reach 170 degrees Celsius. The baked moon cakes are crispy and smooth. The key to their delicious taste is that the crispy outer skin and rich sesame seeds absorb the oil spilled from the stuffing, so they are fat but not greasy.

Nowadays, moon cake shops of various sizes are scattered in Qiaodun Town. On the street with Ding Yuanxing, you can see Chen Yucheng,, Qiao Dun's moon cake shops, etc. And its operators also have certain connections with Ding Kaitai, Chen Fuxing and others. They are either apprentices or apprentices when they study art, so although there are some differences in materials, the taste of moon cakes on the pier is basically the same.

According to Zhang Jiayou, deputy mayor of Qiaodun Town, there are currently 29 shops making and selling moon cakes in Qiaodun Town, with an annual output value exceeding150,000 yuan, especially one month before the Mid-Autumn Festival, many consumers drive all the way to buy moon cakes, and many local shops have to hire people to make cakes, which is very popular.

Many pier people also rely on their own cake-making skills to open cake shops in various places. It is understood that there are more than 120 shops selling mooncakes on piers in Qiaodun Town, which are scattered in counties and surrounding provinces and cities of our city. The total sales of all cake shops can reach more than 80 million yuan a year. In addition, through cooperation with the postal service, we will expand the sales channels and sell the moon cakes on the piers to Russia, the United States and other countries.

The future of moon cakes on the pier

"According to the current results, the moon cakes on the dock can be called an industry." Zhang Jiayou said: "We still want to set some norms and continue to make this industry bigger."
