Add a spoonful of lemon and it will thicken immediately.
4. Keep it at 85 degrees for 5 minutes and continue to stir. When you feel the fire is big, stay away from it a little, and when it is small, it is close to heating.
5. After cooling, put it in the refrigerator overnight (12 hours), it will become thicker than yogurt.
6. Prepare clean gauze in advance, fix it in a deep container with a clip, tie the frozen cheese with gauze and hang it on chopsticks, and put it in the refrigerator for about 24 hours.
7. Let the whey drip dry, very thick!
