Enteric casings are a common food packaging material used to make various types of sausages. In the process of making blood sausages, enteric coating is used as a casing to encase the blood stuffing to keep it in shape and prevent it from coagulating prematurely.
The casings need to be cleaned before use and the air inside the casings needs to be removed before filling the blood stuffing to prevent the casings from rupturing. The condition of the casing needs to be checked regularly during the process of making blood sausage.
