How to make rotten garlic eggplant:
1. Remove the eggplant stems and wash the handles, then put them into a steamer and steam them until cooked. Use chopsticks to prick them until they are cooked. Don't steam it too much;
2. Peel and wash the garlic cloves. Soak the garlic cloves in water for a while to make them easier to peel;
3. Put the garlic in a garlic jar Put a spoonful of salt in the middle and mash it into a puree. It will be easier to smash the garlic with a knife and then mash it. The garlic must be mashed into a puree so that the garlic flavor can be fully brought out. Do not cut it into pieces with a knife. That way the flavor will not be strong enough;
4. Cut the coriander into fine pieces and add it to the minced garlic and mix well;
5. Take a steamed eggplant that has been left to cool and cut it vertically. One side (the other side is intact), then rub a little salt into the eggplant, then take a small spoonful of the mixed garlic paste and wrap it in it, and cook the rest of the eggplant in the same way;
6. Place the wrapped rotten garlic eggplants in a crisper and arrange them layer by layer. Sprinkle a layer of salt on each layer, then close the lid and leave it for 2 hours before eating. The garlic eggplants are ready. In the summer, it is best to store it in the refrigerator.
