Steps:
First, cook the thick noodles, tease them out, and put them into a basket to cool on one side, being careful not to stick.
Put the cooled noodles into a plate (the kind that serves one person).
Mix a quarter of the volume of tomato sauce with the same volume of water, add a little bit of sugar, add it to the noodles and mix well.
Add a little bit of soy sauce to the noodles (either for dipping or for coloring), note that the soy sauce must be small and not cover the color of the tomato sauce after mixing well).
Leave the noodles to marinate for 10 - 20 minutes. In the meantime, dice the garlic and scallions. The total volume is about one-fifth of the volume of the pasta.
Open a frying pan over medium heat. You don't need too much oil. When the pan is hot, sauté the shallots and garlic until fragrant.
Before the onion and garlic burn, add the marinated noodles. Use chopsticks to shake them out so the noodles don't stick. After about 6-7 minutes, the sauce will have dried up considerably, so turn off the heat and serve the noodles.
Fresh and flavorful, oily but not greasy.
