Pork Spleen is called Pork Hengli in Guangdong, which is mostly used in soups by Cantonese people, but our family, who live in Guangdong, likes to stir-fry it. This is one of my aunt's specialty dishes.
Ingredients ?
1 pork spleen
4 cloves of garlic
4 slices of ginger
1 small stalk of celery
Onion in moderation
2 green bell peppers
2 red bell peppers
Salt in moderation
1 tablespoon of soya sauce
1 tablespoon of oyster sauce
1 tablespoon of wine
Chicken powder a bit
Spicy sauce a little bit
Moderate amount of cooking oil
How to make Stir-fried Pork Spleen (Pork Tongue) ?
Pork spleen, also known as pork cross tongue, was a dollar a piece, regardless of size, at the grocery store before the price of pork went up. Now it's 2 bucks.
Rinse well
Slice diagonally (slice diagonally for larger slices)
Sit in a pot of boiling water
Put the pork spleen in the pot
When the water turns cloudy, pull out the spleen
Pass it through cool water
Drain
Put the drained spleen in the wine, salt, chicken broth powder, soya sauce, oyster sauce and cooking oil
Mix well and marinate for 5 minutes. Mix well and marinate for 5 minutes

Heat the oil to smoke. Double your usual amount of oil for one dish
Put in the pork spleens and stir-fry quickly
After 10 seconds, pull the spleens to one side, and on the other side, pour in the side dishes as above. Stir-fry them
After about 20 seconds, mix with the pork spleen and stir-fry
The whole stir-frying process takes about a minute to a minute and a half
Put out the pan on a plate

The texture of the pork is very tender and meaty, and it's the one dish that is always on the menu in our house. It's cheap, tasty and very good for dinner.
