Wash beef and cut it into thin slices.
Grab it with cooking wine, soy sauce and starch and marinate it for a while.
Wash perilla and defoliate.
Wash ginger and cut into thin slices, mash and chop garlic, and cut pepper into sections for later use.
Heat the oil in the wok over medium heat. When the oil temperature is 50% hot, add ginger slices, minced garlic and pepper and stir-fry until fragrant.
Then turn to high heat, add beef and stir-fry for a while.
When the beef changes color, add oyster sauce and salt.
Add perilla leaves and stir-fry until the beef is cooked.
