Specific production method
Step 1: Prepare the ingredients. 2 pig's trotters, a small half bowl of rock sugar, a few scallions, ginger in moderation, 2 pieces of cinnamon, 3 star anise, 3 dried chili peppers.
Step 2: Chop the pig's hooves into pieces, then soak them in water for 2 hours. (Soaking with water can better remove impurities in the pig's feet and make them taste better. Just now the day is hot, soaking, must be placed in a cool place, in addition, halfway to change 1-2 times the water oh.)
Step 3: Add the pig's trotters to the pot with cool water, then add 2 tablespoons of cooking wine to the pot. Bring to a boil over high heat and skim off the foam, then fish out the pig's feet.
Step 4: While still hot, add half a bowl of soy sauce and half a bowl of soy sauce to the pig's feet and mix well, so that each pig's feet are coated with soy sauce, then marinate for half an hour. (This step will give the pig's feet better color and flavor.)
Step 5: Pour the pig's trotters with the soy sauce into the rice cooker, then add the rock sugar, star anise, cinnamon, scallions, ginger, dried chili peppers, 3 tablespoons of salt, and 1 large bowl of water, then cover the cooker and simmer for 1 hour, then simmer for 1 hour. (The amount of water is just not over the pig's feet. Also, at the end of stewing, if there is more soup in the pot, you can pour the whole pot of pig's trotters with soup into the frying pan and heat it over high heat to dry up the soup some.)
Step 6: Serve to start.
