Making material
The material for making rice noodles is very simple, just need rice and water. Choose high-quality glutinous rice for rice, clean water for water, not tap water.
Production step
1. Rice washing: Wash the rice with clear water and soak it for about half an hour to make the rice fully absorb water.
2. Pulping: Put the soaked rice into a stone mill, add a proper amount of water and start pulping. Pay attention to the uniform grinding speed and moderate intensity when grinding the pulp, so as not to affect the quality of flour.
3. Sieving: Sieve the ground flour paste to remove impurities and make the flour smoother and more delicate.
4. Kneading: Put the flour on the chopping board, add appropriate amount of water and knead it into dough. When kneading dough, you should pay attention to the gentle technique and moderate strength to avoid the dough being too tight.
5. Rolling: Roll the kneaded dough into thin slices, then fold the thin slices and roll them into thin slices again. Repeat this process several times until the dough becomes very smooth.
6. Slice: Cut the rolled dough into thin strips, which can be cut into different widths according to your own preferences.
7. Cooking noodles: put the cut noodles into the pot, add appropriate amount of water, cook until the noodles become soft and glutinous, remove and drain.

Rice noodles can be made into many different dishes, such as rice noodle soup, rice batter, rice flour cake and so on. Among them, rice noodle soup is the most common way to eat. Put the cooked rice noodles into a bowl, add hot water, vegetables, meat and other ingredients, and stir well to serve.
