Soak dried vegetables in warm water. Soak the ribs in water for 10 minutes, rinse with water, drain and set aside. Shred the ginger and cut the red pepper into sections. Add salt, oyster sauce, pepper, light soy sauce, cooking wine, and cornstarch to the pork ribs, stir evenly with chopsticks, and marinate for 20 minutes. Wash the soaked dried vegetables and cut them into small pieces; heat a pan with oil. When the oil is hot, add shredded ginger and stir-fry until fragrant. Then add the dried vegetables, add a little salt, stir-fry for a minute, then turn off the heat and put on a plate.
How to cook dried vegetables:
1. Prepare a handful of dried vegetables and soak them in warm water.
2. Soak the ribs in water for 10 minutes to remove the blood in the ribs, then rinse them with water, drain and set aside.
3. Cut ginger into shreds and red pepper into sections.
4. Add an appropriate amount of salt, oyster sauce, pepper, light soy sauce, cooking wine, and cornstarch to the ribs, stir evenly with chopsticks, and marinate for 20 minutes.
5. Rinse the soaked dried vegetables and cut them into small sections with a knife.
6. Heat oil in a hot pan. After the oil is hot, add some shredded ginger and stir-fry until fragrant. Then add dried vegetables, add a little salt, stir-fry for a minute, then turn off the heat and put on a plate.
7. Crack an egg into the marinated pork ribs, add a spoonful of vegetable oil, stir evenly, and then spread it on top of the dried vegetables.
8. Boil water in a steamer. After the water boils, add the ribs and dried vegetables, cover the pot, and steam over high heat for 30 minutes.
