Put the vermicelli in boiling water and cook for 2-3 minutes, remove and drain, cut into appropriate sizes and set aside

Peel the lotus root, cut into thin slices and then cut the lotus root slices into small pieces

Remove the seeds from the green pepper, remove the stem and shred, and shred the carrot

Crush the garlic and mince it, peel and shred the ginger

Heat the wok, add cooking oil and heat it. Add minced ginger and garlic and stir-fry over low heat

Add in meat slices. After the meat slices change color, add carrots and lotus roots and stir-fry

When the carrots become soft and the lotus roots become transparent, add the vermicelli and chili shreds and stir-fry briefly

Add cooking wine, chili sauce and light soy sauce and stir-fry evenly
