1. Remove the internal organs of turbot and clean them.
2. Make a few cuts on the fish.
3. Put oil in the pot, add the fish and fry it on both sides.
4. After frying, pour in cooking wine.
5. Add light soy sauce and dark soy sauce.
6. Add onion, ginger and garlic.
7. Add appropriate amount of hot water and simmer for 7 or 8 minutes.
