The way to pickle cucumbers is to wash fresh cucumbers, dry the surface, cut them into thick strips and place them in a clean container, sprinkle them with salt and pickle them for about three hours until the strips are soft, squeeze out the water and place them in the sun to dry. When the sun is good, it is enough to dry them for a day, and then cut them into small pieces and place them in the pickling vessel.
Add salt, pepper, vinegar, sugar, soy sauce, and oyster sauce to the water, bring to a boil and cool, then add to the cucumber vessel with just enough water to submerge the cucumber wine. Finally, add ginger slices and millet peppers, marinate for a few hours and serve. Crisp, sweet, sour and spicy. Note that there is no oil throughout.
