Open your mouth and laugh ~ Also known as "Sesame Smiles and Jujube" and "Hemp Ball" ~
A very traditional snack ~ I have been eating a big snack with me since I can remember ~ I used to buy it ~ Later I learned that I made it myself ~ It looks like a piece of dough (2g flour) can be fried for thirty or forty pieces ~ If I can't finish it, I can put it in a food bag or keep it fresh.
2g of low-gluten or medium-gluten flour
1 egg
75g of sugar
2g of salad oil
2g of baking soda
appropriate amount of white sesame (raw)
appropriate amount of water
How to smile?
put eggs+sugar+baking soda+salad oil in a basin and stir until the sugar is almost melted. Then add flour and water to make dough, which is not easy to knead for a long time. Avoid getting too energetic ~ Just make it into dough ~ Refer to your earlobe for softness and hardness ~ Try pinching the earlobe with your hands ~ Don't be too soft ~ It's hard to shape ~
Cover the dough with plastic wrap or buckle a basin and wake up for 15 minutes ~
Then put the dough on the panel like jiaozi, knead it into strips, and cut it into small pieces with a knife, about 1g each, not too big to fry. Avoid sticking when rubbing. Sprinkle a little dry flour to make powder ~
Cut small dough and rub it into balls by hand. After all rubbing, soak the ball dough with water by hand or brush (wet it evenly), then stick the raw sesame seeds while wet, and rub them round by hand after sticking, so that the sesame seeds can stick firmly ~
Burn a pot of oil, and the depth of the oil should not exceed the ball, and raise the temperature to 14-15. When the ball expands and cracks to a certain extent, turn on high fire to stir fry until it is golden yellow ~ The whole frying process takes about 3 minutes ~
Tips
The dough is not easy to knead for a long time, so don't exert yourself, or it will not be easy to shape ~ Stick sesame seeds and knead them again by hand to avoid dropping sesame seeds during frying ~ The oil temperature is not easy to be too high during frying. Pay attention to the surrounding of the ball, and it means that the oil temperature is enough to keep bubbling ~ Before taking out of the pot, you need to turn on high fire to raise the oil temperature.
