1, raw materials and equipment
(1) Raw materials: First-class peanuts with full grain size, no rotten grains and no impurities are selected, and soybean starch with high purchasing accuracy and good coagulation effect is reserved.
(2) Equipment: refiner (model size can be customized, but the filter screen must be above 100 mesh), liquefied gas cooker (mainly fire control, coal fire and firewood can also be replaced), diskless, plastic mold box, fruit and vegetable juicer, etc.
2. Production process
(1) Soak the selected peanuts in clean water for about 6 hours, and the amount of water should be 5 ~ 10 cm more than that of peanuts.
(2) Take out the soaked peanuts and grind them with a refiner. In the process of grinding, a proper amount of water should be added, but at most it should not exceed 9 times that of dried peanuts.
(3) Divide the ground peanut pulp into two halves, add starch into the peanut pulp according to the ratio of dry peanuts to starch of 1: 1, and stir evenly. Be sure to stir well until the starch is completely mixed. While stirring, various edible pigments, vegetable juice, fruit juice, plant spices and seasonings such as eggs and sesame seeds can be added as needed.
(4) Put the other half of peanut pulp without starch on the fire, first reduce the fire, then gradually increase the firepower, and at the same time constantly stir the peanut pulp with a spatula to make it evenly heated. Then pour all the peanut pulp mixed with human starch into the cooked peanut pulp at a uniform speed and stir it quickly until it boils again. In this process, the firepower can be gradually increased.
(5) Ladle the mixed boiled peanut pulp into a plastic mold box, and naturally cool for 4- 5 hours to obtain the finished product. If you want to make hard peanut tofu, you can cook (concentrate) it on the fire for a while.
(6) Under the condition of not adding any auxiliary materials, the peanut tofu made of raw peanuts has obvious fragrance, while the peanut tofu made of fried peanuts has strong fragrance.
