What kind of tea is Pu 'er tea?
Pu 'er tea is neither black tea nor green tea. What really makes Pu 'er tea and green tea and black tea together is that the color of tea soup is relatively close.
Because the processing technology and tea-making principle of Pu 'er tea are similar to other black teas, Pu 'er tea belongs to the category of "black tea" in the traditional classification of tea, and belongs to a kind of fermented black tea.
Pu 'er tea can be divided into raw tea and cooked tea according to its processing technology and quality characteristics.
The tea soups of Pu 'er raw tea and green tea are similar in color, and the tea soups of Pu 'er cooked tea and black tea are similar in color, but it is impossible to tell whether it is green tea or black tea.
Protein contained in green tea will be partially hydrolyzed to form amino acids under the conditions of high temperature and high humidity, which will increase its total amount, thus reflecting its fresh, mellow and refreshing taste.
The uniqueness of black tea lies in its technological fermentation, in which tea polyphenols are oxidized, polymerized and condensed. The main components are theaflavins, thearubigins and theabrownin, which form the color and taste of black tea and protein, so it changes from bitter to sweet.
Many people who love tea should know that the uniqueness of Pu 'er tea lies in the color of tea soup. For example, natural transformation, aging and long-term storage, as well as its unique production technology and some collection values and practical effects.
It shows that it is different from the other six major teas, so it is called "special tea".
There are many kinds of teas in China. Before this, some people in the academic circles took tea as the basis, according to its preparation method and quality. According to the oxidation degree of tea polyphenols, the first-class tea can be divided into six categories: green tea, white tea, yellow tea, green tea, black tea and black tea.
At the same time, combined with the commodity form of tea, it was renamed as green tea, scented tea, oolong tea, white tea, black tea, pressed tea and instant tea. This method has been widely used in industry for many years.
