1. Ingredients: One three-yellow chicken, one bottle of Shaoxing Huadiao wine, one star anise, one spoonful of peppercorns, one piece of ginger, 4 shallots, one spoonful of salt, one small spoonful of chicken essence, and one bag of ice cubes.
2. Buy the three-yellow chicken and wash it with water (remove the chicken head and tail according to personal preference).
3. Pour water into the pot (it is better to cover the chicken body) and bring to a boil. Add the whole chicken and ginger slices. Cover and cook for 15 minutes then turn off the heat. Simmer for another 5 minutes. (Do not open the lid during the process).
4. Take out the whole chicken and put it into the prepared ice water. Cover it with ice cubes and wait for it to cool completely before taking it out and cutting it into pieces. (Ice cubes and ice water can make the chicken skin crispy and elastic, and the chicken pieces will be shaped after cutting into pieces, locking in the delicious flavor of the chicken juice).
5. Take a new pot and pour an appropriate amount of water and Shaoxing Huadiao wine (2-3 liang of Shaoxing wine for one chicken), add star anise, Sichuan peppercorns, green onions, and salt (you can add more). A small amount of chicken essence. Cook over low heat until the brine boils slightly, then turn off the heat and wait for the brine to cool down. Take a sealable bottle or food box, put the chicken pieces in, pour the brine to cover the chicken pieces, and put it in the refrigerator for 4 hours before eating.
