1. Sweet and sour poached eggs

2. Scrambled eggs
Ingredients: 3 eggs, 1 small handful of dried small shrimps, appropriate amounts of chopped green onion, salt and cooking wine.
Method:
1. Pick out the shrimp tentacles inside the shrimp skin and rinse the shrimp skin with clean water.
2. Crack the eggs into the bowl.
3. Put chopped green onions into eggs.
4. Add a little cooking wine to remove the fishy smell.
5. Beat the eggs with chopsticks.
6. Put the same amount of water as the egg liquid into the pot, that is, the ratio of egg liquid to water is 1:1.
7. Add washed dried shrimps.
8. Add a little salt to taste; it is not advisable to add too much salt because the shrimp skin has a salty taste.
9. Boil the water over high heat and change to medium to small heat.
10. Pour the egg liquid into the boiling water.
11. Do not stir at this time, wait until the egg liquid is slowly set.
12. The egg liquid will slowly expand and the egg liquid below has been finalized.
13. Use a spatula to slowly push it from the edge of the pot. During the pushing process, the egg liquid will form lumpy eggs.
14. Stir the eggs until they form uniform lumps and stir-fry continuously.
15. When the soup inside the eggs dries up, you can take it out of the pot.
3. Tea eggs
Ingredients: 8 eggs, appropriate amount of soy sauce, appropriate amount of salt, appropriate amount of tea leaves, appropriate amount of star anise
Method: 1) Wash the eggs .
2) Put the eggs in a casserole, fill it with water, bring to a boil over medium heat, cook for another 5 minutes, and turn off the heat.
3) Wait until it is warm, pour out the water, and crack the egg shells one by one.
4) Put the eggs with cracked shells back into the pot, add salt, soy sauce, star anise and tea leaves, and refill with water.
5) Cover the pot and bring to a boil over medium heat.
