I soak the soybeans myself and then beat them into pulp and squeeze out the juice to make soy milk. Sometimes I take the remaining bean dregs to the backyard to smell small animals, and sometimes I use the waste to make bean dregs cakes.
Ingredients
Soak about 4 taels of dry soybeans, beat into juice and squeeze out the remaining residue, 2-3 tablespoons of glutinous rice flour, 1 egg, 1-2 green onions, salt About 1 teaspoon, about 1/2 teaspoon of black pepper
Method
1. Add the glutinous rice flour to the soybean residue, beat in the eggs and mix well with your hands. (The remaining water in the bean dregs plus the eggs should allow the bean dregs to form.)
2. Chop the green onion and add it to the bean dregs, add salt and black pepper and mix well again.
3. Knead the bean dregs into a cake about 5 mm thick. (I used the lid of a round lunch box as a mold to press the round cakes)
4. Heat the pan, add an appropriate amount of oil, put the bean dregs cakes in, cover the pan over medium heat and fry for 2-3 minutes, then Turn over, add a little more oil when turning over, and fry for another 2-3 minutes.
