What noodles should I choose for cold noodles?
If you want noodles, you can buy them. I suggest you buy round noodles or roll them yourself. The noodles should be strong.

Chuanxiang cold noodles with sesame sauce

Materials:

Half a catty of fresh noodles, sprouts, peanuts, shallots, soy sauce, sesame oil, vinegar, sugar, Chili oil.

Exercise:

1. Put the fresh noodles in boiling water, and cook them on medium heat until the noodles are ripe. You can feel the elasticity when you cut them by hand, and the inside is slightly hard.

After the noodles are taken out, cool them with cold water, then drain them and mix in about 2 teaspoons of sesame oil to prevent the noodles from sticking.

2. Add the right amount of oil to the wok, fry the peanuts until they are crisp and cool, then pat them gently with a knife or a rolling pin, but don't make them into powder.

Leave a spoonful of oil in the pot. When it is heated to 50%, add chopped sprouts and a little chives and stir-fry slowly over medium heat. Add a spoonful of sugar and stir well.

3. Add 2 tablespoons soy sauce, 1 tablespoon vinegar and 1 tablespoon sugar to the cooked noodles, add appropriate amount of chicken essence and red oil and mix well.

Then add an appropriate amount of oil pepper according to your own taste, and finally sprinkle some sprouts, peanuts, shallots and sesame seeds and mix well.
