Introduction of Zuo Zongtang Chicken
Zuo Zongtang Chicken (English name: General Tso's Chicken), also known as Left Rooster. 1952 was created by Peng Changgui under the name Zuo Zongtang, but it was not directly related to the late Qing general Zuo Zongtang. Zuo Zongtang's chicken is made by boneless and diced chicken legs, seedless and diced peppers, fried chicken pieces and drained, then evenly mixed with peppers, chicken pieces, soy sauce, vinegar, minced garlic, Jiang Mo and chopped green onion, and finally thickened and drenched with sesame oil. Peng Changgui studied under Cao Yuchen, a famous chef of Hunan cuisine. His cooking dishes are Hunan cuisine on the surface and Huaiyang cuisine on the foundation. His technique is Lingnan cuisine, plus his own creativity. Therefore, Zuo Zongtang chicken is generally classified as Hunan cuisine, and some people classify it as innovative cuisine.
