1. Ingredients: 300 grams of pen tube octopus, 1 yellow pepper, half a carrot, 1 cucumber, appropriate amount of onion, ginger, garlic, oil, appropriate amount of salt, light soy sauce, appropriate amount of soybean paste.
2. Boil water in a pot and blanch the pen tube squid in the pot.
3. Take out the pen tube squid, wash it, drain it and set aside for later use.
4. Cut vegetables into cubes and slice onions, ginger, and garlic for later use.
5. Pour oil into the pot and heat.
6. Add ginger and garlic and saute until fragrant.
7. Add vegetables, carrots, parsley core and yellow pepper, stir-fry evenly.
8. Add soybean paste and stir-fry evenly.
9. Add the pen tube squid and continue to stir-fry.
10. Add salt and light soy sauce, then add 30ml of water, and stir-fry until flavourful.
11. Finally add cucumber and minced green onion and stir-fry evenly.
12. After all the ingredients are seasoned, it is ready to be served.
