Peasant-style fried meat, also known as Chili fried meat, is the dish that best reflects the level of a Hunan chef. Therefore, when you go to Hunan restaurant, you can judge whether it is authentic Hunan cuisine by frying meat with Chili. For children who grew up in Hunan, the Chili fried meat cooked by their mother will be the best and the most memorable. Our children also love this dish very much, and they like to order small fried meat from farmers wherever they eat. Today, I also contributed my own Chili fried meat practice, which was successful on the whole.
Raw materials: lean pork, green pepper, garlic, lobster sauce, soy sauce, salt and cooking oil.
Practice steps:
Step 1, the green pepper is washed and cut into diamonds, the meat and fat meat are sliced separately, the garlic is sliced, and the douchi is soaked in water for about 1 min;
Step 2, after the pan is heated, pour in an appropriate amount of cooking oil, and after the oil is heated, pour in green peppers, stir-fry the peppers until they are weak, and take them out for use;
Step 3, add fat and stir-fry oil, and choose the degree of stir-fry oil according to your own preferences;
Step 4, pour in lean meat and stir fry quickly for a while until it is 6 ripe;
Step 5, add garlic and lobster sauce, pour a small amount of soy sauce and continue to stir fry for about 30 seconds;
Step 6, add green pepper, salt and meat, stir fry together, and pour a small amount of soy sauce to color before taking out;
Tips:
1. Pork belly can be used instead of fat and thin meat; 2. If you like spicy food, you'd better use local green peppers in Hunan.
