Ingredients: 250g duck tongue, ginger, onion, soy sauce, Shaoxing wine, monosodium glutamate, tsaoko powder and cinnamon powder.
Practice: duck tongue peeled, washed and dried in a cool and ventilated place; Mix soy sauce, Amomum tsaoko powder, cinnamon powder and monosodium glutamate, soak in duck tongue for about 1 hour, take out and expose to the sun for 1 day. Cold duck tongue
Ingredients: duck tongue, cucumber, red pepper, refined salt, monosodium glutamate, cooking wine, pepper, soy sauce, pepper oil, ginger wine and clear soup.
Practice: Cook duck tongue with ginger wine and clear soup. Cut the cucumber into oblique slices and code it on the plate. Shred red pepper. Remove the tongue membrane and tongue tendon from duck tongue, add seasoning, mix well and marinate slightly, put on cucumber slices and sprinkle with a little shredded red pepper.
