What did the ancients call white sugar?
In ancient China, there were developed winemaking and tea-making techniques, but the appearance of sugar, which later became one of the main edible seasonings for China people, was relatively late. In China ancient books, the word "sugar" appeared relatively late. Before the word "sugar" appeared, "honey" and "pulp" appeared first. "Coconut" first appeared in the pre-Qin period, when it was actually just maltose, not white sugar in the present sense. Emperor Taizong once sent people to India to study sugar-making. The embryonic form of white sugar we are eating now was introduced to China from India in the Tang Dynasty. The actual practice was to add alkali on the basis of local sugar-making in China before, and then make loose brown sugar. Although the word "white sugar" occasionally appears in the ancient books of the Tang Dynasty, in fact, the white sugar in the Tang Dynasty is not really white, but more colorful and brighter than black sugar and red sugar. In the Yuan Dynasty, there was a major turning point in sugar-making technology. After China people added tree ash in the sugar-making process, real white sugar, namely "white" and "sand", began to appear. China's technology of making white sugar was introduced to India in the13rd century, so the word "willingness" in Sanskrit means "from China". In the Ming Dynasty, China people further improved the sugar-making technique and invented a "yellow mud method", which can achieve a good decoloring effect. It was recorded in detail in Song Yingxing's "Tiangong Kaiwu". In the middle and late Ming Dynasty, some new crop products from all over the world, such as peppers, corn and carrots, were introduced to China, and the sugar-making technology was also perfected. Therefore, the food culture of China people has been greatly developed since the middle of the Ming Dynasty. Mr. Ji Xianlin has a deep research on the spread history of sugar in the world. In the 1980s, based on the textual research of Dunhuang remnants, he wrote a famous work "Sugar History" in his later years.
