The method of frying mushrooms is as follows:
Prepare the ingredients, wash the oyster mushrooms, remove the roots and tear them into small florets.
Prepare crispy fried batter - flour and sweet potato starch 1:1, add a little salt and sugar to adjust the base taste, it is OK if you don’t add it, pour in the cooking oil, and then slowly add water to make a thick yogurt state. The amount of water here is not certain, it mainly depends on the condition, and it doesn't matter whether it is thicker or thinner.
The mushrooms are rolled in crispy fried batter and covered with crispy fried batter.
When the oil temperature rises to about 170°C, if you don’t have a thermometer, just put the chopsticks into the oil until dense small bubbles form around the chopsticks.
Put the battered mushrooms into the oil pan and fry slowly over low heat. Do not move them until they float. Use chopsticks to pull them apart and fry for another 1 to 2 minutes. This process is to fry the mushrooms until they are cooked, and when the surface becomes hard and golden brown, remove and drain the oil.
